When I call the filament manager in the current beta, the writing is far too big.

You are not alone. Installed 2.7.0.55 today (5/14) and I am seeing this same over sized screen.
seems like dpi scaling issue 
The fillament UI is even quirky for me on stable version so nothing changed for me….
Not to speak of the unusuable add fillament popup.
