Shorter description:
Printer starts printing just fine. First handful of layers look ok. But then it just slowly stops extruding filament until it looks like the attached picture. It will completely stop extruding filament and just hover above the print when it thinks it’s actually printing.

I’ve had my printer for a couple of years now. For the most part I used it every few weeks. Until recently so I decided to swap the head out as I ended up getting a clog which I found when I popped the PTFE tube off the top of the extruder. When I pulled the extruder apart to replace the head I notice a bit of filament debris on the gears and blew them off with compressed air. After replacing the head I have had nothing but problems. The filament seems to slowly stop extruding out of the head. When I stop the print and unload it has no problem unloading. If I stop the print, and then manually tell it to extrude some filament out of the head it will not extrude any. Should also note that I haven’t seen any problems with the temps for the build plate nor the nozzle.
Is it the feeding gear inside the head? I’ve tried different slots in the AMS with the same issue. I am not sure what to check next.

Have only use Bambu filaments (PLA Basic/Matte) to print until now (trying a Sunlu PLA), but the problem exists on both.
I have seen this on my P1 before. While there can be multiple causes, what you are describing is commonly associated with a nozzle heater or temperature sensing issue.
Two likely contributors come to mind:
A failing thermistor or a failing ceramic heater. In practice, these are typically replaced together.
Degraded or improperly applied thermal paste around the thermistor, which can reduce effective thermal coupling and lead to incorrect temperature readings.
If this were my machine, my first troubleshooting step would be to swap the nozzle. Replacing the complete nozzle assembly is the simplest approach, since the heater and thermistor are already installed and eliminates the hassle of handling those components individually. If you have never done that work before, it can be tedious.
If you do not already have a spare nozzle assembly, this is a good reason to keep one on hand for exactly this type of issue.
BTW: If you don’t have spare nozzles, buy them now because it looks like Bambu is deprecating the P1 series parts for sale. I just went down a rabbit hole trying to find the link for the nozzle for the P1P and there is no way to navigate from the US Bambu Store, it may be different in other parts of the world but if you search for nozzle, only 13 parts come up and none of them are for the P1 series. I had to resort to Google to find the link and there is no guarantee it will stay up there if they removed it from the main page:
This is all the more reason I left the Bambu Ecosystem. After supporting them 3 years ago with the purchase of my P1P, I feel abandoned.
It is looking like you may be correct. Luckily I had one more complete nozzle to try. I loaded that in today and I’ve had a few successful small prints over the last couple hours. Going to try the other filament and see if we have success. It also looks like I may have had a piece of filament stuck somewhere in the chain. When I put the new head in and it pushed out the first bit of filament to flush there was a white piece that came out with the black filament I am using. I have not printed with white for a few days. I’ll mark as solved after I try a bigger print over night here. Thank you!
