I have a piece that is 30x30cm and my bed is 25x25, so I have to cut it into more than two pieces. From everything I found, the cut tool can only do one cut at a time. Am I missing something?
You are not missing anything. The cut tool is a single-action item.

Indeed it can only do a single cut. But you can use it repeatedly. Tedious, but possible.

My scenario is that I have a three mm thick body (a “plate” say) and I want to but-join it to another piece. I dont think the cut will help there in terms of creating a good glueable connection. Right?
I cant remember if bambu studio even has it, but there is the dovetail seam.
Alternatively, you can put it at an angle and use supports. like below.
