Ok.
I doubt that you’ll want to use a cool plate for HIPS (warping). The 0° is used to highlight incompatibility.
A nozzle temp of 240°C is recommended here: https://filament2print.com/en/hips/1235-z-hips.html
But I’d print the first layer no cooler than the subsequent layers.
You get the flow ratio from the flow calibration. Afterwards, also calibrate Flow Dynamics (also known as Pressure Advance).

In Studio, you have several options to perform filament calibrations.
The easiest is probably the older calibration tab (same line as Prepare, Preview, Device,…). With an X1, you can use the auto-calibration. Or, to start to get a better understanding, try the manual calibrations.
