The hotends are interchangeable. Meaning you can switch them back and forth. I’m guessing there is some other reason for CF only through one side. But I do wonder if the left is from the machine’s left, or the person’s left. 
The perfect 3mm measurement states about 8% error right there in the picture (+/- 0.25mm).

So I am not the only person disappointed to not see an omelet thickness listed in the cutter specs?

I believe that’s because those filaments need to use the extra port for non-AMS filaments. That is supposed to connect to the left hotend IIRC
TPU right stationary hot end, PPA/PPS/PET left hot end. Which sucks as you cant use AMT HT for all of those, and it has a TPU bypass hole.

The reason for the difference in which one to use is because the RIGHT nozzle is actually physically stationary in the print head assembly, the mechanism raises and lowers only the left side. Some filaments are recommended on the left or right to optimize reduction of wear on assembly and filament over time as well as other concerns we aren’t yet fully clued into yet. but these are what’s been communicated and fleshed out by some of the YouTubers so far

Its because the right nozzle has a seperate feeding hole. Same hole for tpu. It only goes to the right nozzle. Used for tpu and filaments that break easily
