Hello everyone.
I’ve been reading this forum for ages, and I’ve finally decided to take the plunge.
So I’m going to buy a P2S. What accessories would you recommend I buy at the same time?
For now, I’ve got a few spools of PLA, PETG, and ABS filament
and two hotends: a spare 0.4mm and a 0.6mm.
Would it be worth buying another build plate or other accessories?

Yes, grab another build plate.
It comes with a dual sided textured plate which is excellent.
You may wish to purchase a smooth plate. It offers additional grip and gives your prints the smoothest bottom you could imagine. ^^
You have lots of the other important stuff.
I recommend you just get it and start playing. You should get a feel for it.
If you haven’t gone for the combo version (with an AMS), you should consider that. Being able to print without manually loading is far better, being able to print with multiple colours or materials (when applicable) is a pure joy.
^^ if this is your first 3D printer: Cleaning build plates is a normal and required part of maintenance, make sure you do when things stop adhering. Remember, you can flip the plate to use that surface before you need to clean. Don’t touch the plate surfaces with your fingers, grab from the edges. It increases the interval between cleaning significantly.
I do plan to get the version with the AMS 2 Pro.
I’m not new to 3D printing; I’m coming from an old Creality CR10 S Pro.
Regarding the build plate, which model do you recommend?
The engineering plate is great. I prefer it over the smooth plates. Although you need glue for all materials.
A second AMS is always a great upgrade, but can be expensive.
Looking at the descriptions of the plates,

Glue is a good idea. But No, it is not necessary all the time.
Only some plates really need it. With the textured PEI, you rarely need it, although it is good for PETG sometimes. With the engineering plate, even PLA with stick so hard that you can damage the plate getting the part off, use glue.
Glue is a release agent, it is not there for adhesion.
I am in the group that says “buy the printer and get started” Consider the “Combo” if you can because it is hard to get an AMS2 separate right now and has been for a while. You will be fine with the plate it comes with until you get your feet under you, I don’t use glue on the textured pei plate very often. As CincinnatiDesigns said glue is usually used as a release agent,
I got to the point that I just had to buy a combo, then I gave away the printer to a friend.
For most things, just the smooth plate.

I never use glue, some do, I have never had to use it.

However, the license plate : Bambu Smooth PEI Plate | Bambu Lab US Store is not currently available for the P2S.
I think I’ll go for something like this: BIQU Panda CryoGrip Pro Build Plate for Bambu Lab X1/P1/A1 | Low-Temp High Adhesion 3D Printing Plate – Biqu Equipment
The glacier plate is a good choice for a second plate. Aside from the “cool plate” paradigm, the texture is fine and satin-like. So you have lots of options.
I got a Bambu Cool Plate SuperTack. Haven’t had any problems with it.

I bought recently the p2s with no accessories, and I regret. I’ve ended up buying 0.4hf nozzle, 0.6, 0.8 and 0.2 nozzles. Also, for engineering filaments the engineering plate, and for pla/petg the cool plate super tack pro, because putting glue on the engineering before every print is a bummer. (and waste of money). I also have 2 ams ht and I’m waiting for the 2pro to be back on stock. I recommend checking out the Vento Box for p2s and the external exhaust fan. when printing with abs, asa, pa… it really makes a difference!

I got a cryogrip and it was a great choice for me and a good test for it is a steep print with no supports.
Please please please don’t buy a p2s, it’s honestly such a horrible machine and in my 6 months of ownership I’ve had more failed than succesful prints and I have yet to get a single good looking print off of this machine
