I want to buy a textured build plate and a smooth build plate. Can I just buy and use the ones made for the P1? If I turn off build plate detection will I be able to print on them without issues? And when I use the one made for P2S I will just turn the build plate detection back on. Would that work fine?

You can use any A1/P1 plate on the P2, they’re the same dimension. As you noted the plate detection won’t work with those but you can 3d print the corresponding QR codes and trick the system.
To prove my point: i exclusively use 3rd party plates with no QR code at all or my old P1 plate on my P2. I have turned off the detection but have successfully tried printing qr codes too.
That depends on your needs. If you want to use the detection, print out the qr codes.
If you don’t care, then just turn off the detection and use any fitting plate.
