I bought a P2S Combo less than one month ago (awaiting now for the second AMS2 Pro to arrive) and, although I’m an IT professional with more than 30 years of experience and I had an old XYZ 3D Printer since 10 years ago, I’m still a newbie in Bambu ecosystem and the way the things are working here.
After reading different discussions across these forums I have understood that there are mainly two modes for Bambu Printers:
1st) Bambu Lab’s Cloud Mode: That offers remote monitoring but the printer transmits data to external servers, including camera feeds, printing jobs, etc… which can be a privacy concern.
2nd) Bambu Lab’s LAN Mode: Print data stays on your home network; no data is sent to external servers. Not dependent on internet connectivity or Bambu server uptime. Remote access via the Handy App is disabled. You cannot monitor or control the printer from outside your home network.
If I’m not wrong with these assumptions, I imagine (and I can confirm with my own experience) that in Cloud Mode the Printer (and the AMS too) receives OTA updates on the firmware (mine is asking for the update since I received it but I’m still using the initial one as I don’t have any issue), while for LAN Mode printers you need to do the upgrades manually.
It is stated in Bambu’s Wiki that in any mode (Cloud or LAN) you can always perform a manual upgrade (and downgrade) of the firmware. if I check the Wiki the release history for P2S is the following:

However in the download section there are only two versions available:

Why the rest of versions are not public available?, How can I downgrade to version 01.01.00.00 or 01.01.03.00 for instance if I have an issue with the online upgrade of 01.02.00.00 version?
On the other hand, what happens with AMS upgrades? I haven’t been able to find a firmware repository for them or even a release History. Are AMS upgrades just possible through OTA process? what about downgrades for AMS?
Sorry for this basic questions but I have been unable to find clear answers in all my readings.
