Wondering if there is a way to scale an entire project all at once with say 5 or 6 plates.
Yes, but probably not the way you wish to.
You can select all (CMD or CTRL + A), then use the toolbar scale icon and adjust.
The problem: it scales everything like a single item, pushing many parts off the build plates.
Unfortunately, there is no current way to scale all items in place and centre at their existing individual locations.

You could try selecting all the items on one plate, then merge them together as one object, then scale that until it gets to the size you want and still fits on the plate. You can right click and center them on the plate as one.
That will still result in the same outcome I described above, the only difference is you will need to repeat the process for as many plates that exist.
