I’m not the most technical minded with 3d printers, basic maintenance is about it 
A1 has printed great for 6 months, now I’m getting lots of stringing, and poor adhesion to textured plate, I’ve printed a few of the small dragons for the kids, dragons printed great now they wont finish printing, and its poor layering, any advice on what i need to change would be great
not just the dragons, anything above coaster height prints stringy
Have you solved the issue? If you haven’t, have you tried doing full calibration? Have you cleaned the plate with soap and water? Is the filament dry?
The textured PEI plates are considered a consumable and lose grip over time. Easy to solve with some Bambu liquid glue (or glue stick dissolved in IPA according to a number here).
I bet you have moisture issues with your filament since you don’t mention maintenance or parts swaps.
If you put a spool of filament in a ziplock bag with a hygrometer (no desiccant) and seal it, in 30-45 minutes the humidity number should stop changing and the number will be dominated by the filament.
With PLA if you get 25% or above, it may be water and you may need to dry and store filament in some kind of controlled humidity cabinet, box, or other.
High moisture content also hurts how well models stick down on that textured PEI.
