Not intending to be flip, and it’s zero help for the current issue (hopefully someone has a workaround) but using Studio to do more complex stuff can have you jumping through hoops to do it. Functionality seems to come and go, things get broken in updates, etc. The features can be handy but you’re seeing why many use different software for design.
Other modeling software can do those kinds of different color extrudes piece of cake.
No problem. Could you cut the text in one and then save it as a 3mf file and upload it here? I’ll try it on my end. You could also save it as an STL but you’ll need to change the file name to .3mf to be able to upload it.
That’s unfortunately where things get a little sticky because there’s a number of ways to go. There are online programs, stuff that’s free, and stuff that costs all with different levels of complexity.
There are a number of threads here where people have discussed the different software and pros and cons. The software I use (Autodesk Fusion) is known for having a steep learning curve. Blender is too. There are others much easier to use though but the more complex programs tend to let you do more things easier once you learn how.
Best bet would be to search for topics here on “best 3d software” and similar to find the discussions. Everyone has their preferences and usually good reasons for going the way they did. But much depends on what you see as your own path with 3D printing. If you plan to do some more complex designs it might be worth the effort to learn the more complex software. But if you aren’t moving in that direction, the less complex stuff may get you where you are wanting to go faster and easier.

I don’t know if this is relevant for your problem, but this is how I in BambuLab studio color letters. I have attached a 3mf file with a simple example.
Make a simple cube and place a text on it as cut type.
Select both the cube and text,
Go to Mesh Boolean and subtract the text from the cube.
Go to Color Painting and fill the letters with the option Edge detection on.
Found a workaround but not happy with it.
Create the tag, and letters. Click “Cut Out”.
Drag the letters seperate. Copy letters to seperat plate.
Print tag.
Back to letters, flip them so they rest on their faces instead of floating in mid air.
Print in font colour required.
Tap them into the holes on the tag.
