When I bring in a colored model, on import I have the option to map the colors to the current filament list. But if I change the filaments after import, I have no way to remap again.
Why is this? Or am I mistaken?

No, there’s no way to bring up the mapping dialog again, at least not w/out re-importing. Which could be an option if you didn’t make any significant changes like additional painting or manual supports and such – you should be able to r-click on an object and “Reload from disk” w/out loosing any object-specific print settings.
Alternatively, and I’m not sure exactly what you mean by “change filaments,” and maybe this is obvious already, but you could just select a new color/filament in the same numbered spot as the one you want to replace. For example if part of the model is yellow and that color is assigned to the #2 slot in the project, changing the #2 filament to, say, orange, will update anything in the project which already used the yellow. There’s also the “Merge with…” feature (from the little ... icon next to each project filament) which can help get rid of a color entirely and replace it with another existing color/filament.
A more manual option may be to go into the paint tool and select the “Fill” tool with “Connected same color” mode. Might be obnoxious if there are many unconnected regions.

Not sure if I understand correctly. Besides re-synching it.may help to just click an individual color and then scroll up to the filaments loaded in the currently selected devices AMS.
