Does the AMS lite mix colours during printing? If I put CMYK spools on, can I paint a model in colours I like in Bambu studio and get that colour on the print (for instance, red)? I’ve seen a suggestion that you can, but no real idea if its true or not.
How about the AMS as opposed to the Lite? Will that do it?

Bambu Studio is only going to show you the colors of filament you have loaded in the AMS/AMS Lite to paint with. It is possible to do what you’re talking about but not in Studio. You can use Hueforge and it will use the transmission distance of light through the filament to create multi-color prints that have more the colors than you have available.
The short answer: no.
The longer answer:
FDM printing doesn’t mix the colours together to form a blend of those colours. ^
FDM printers print lines of filament similar in logic to squeezing out toothpaste or condiments.
Only one comes out at any one time. It is possible to create the effect of blended colours, but this is achieved by laying down one colour and then laying a diff colour over the top. How well this works depends on the translucency of each layer.
As already noted, hueforge, is a type of model that uses this technique to produce attempts of making black and white or colour photos. The black and white ones work better than colour. The photos must be of a certain mix of colours to get a half-decent image, but, these are nowhere near a photo.
There are no differences between an AMS or AMS Lite in this regard.

So lithophanes are good with CMYK, but otherwise, just buy the colours you like for normal 3d colours.
