How to do extrusion calibration for a filament?

I can’t find any way to activate extrusion calibration. I can’t see any filament to choose from. What is wrong here? I tried loading filament and also without. It doesn’t work with every constellation, I can’t enter any values manually.

Attached some pictures and a video. Only in German but I think you can tell what I mean.

Select English as language in the settings, then it will work.

I was hoping that it would fix the problem with the automatic roll change in ams but unfortunately not
