Can someone please tell me the best/quickest/easiest way to fill in this space in the middle with a square? I want to just put a square there with some text and have tried overlaying a cube but I can’t seem to get it to touch all of the sides.

After you click on your model, right click/“Add Part”/“Cube”. Then click on the cube and then the scale button. Use the Red and Green boxes to adjust the size. The Blue box to adjusts the height. Alternatively you can type in the size you want of each just be sure the “uniform scale” box is unchecked.
