On the LCD on the machine, I find the Feeder/Load/Unload screen. But which filament is it unloading and loading?

The feed/unload is for when the external spool is used. When the AMS is used with the printer all of the feeding and unloading is handled by the AMS.

Ah. But I recently wanted to take 3 spools out of AMS so that I could put in a hygrometer. How then do I tell AMS to retract all filament to allow me to remove the spools? And then later when I put them back in, AMS did not recognize them (i.e. Via the RFID). How would I tell AMS about the newly placed spools?
If the AMS isn’t printing from the spool, the filament is only about an inch into the AMS while it is sitting idle. You can simply pull on the filament and it will come out of the AMS.
To reload, you may need to wait till the printing job is finished as the AMS doesn’t recognise new RFID’s while printing. (This may have changed on the most recent firmware).
