Ensure the AMS 2 Pro or AMS HT are disconnected, before performing the update. If any of them are connected, the update might fail or give an error.
For X1C, the region selection page screen might show up after the update.
If this happens, the solution is to reboot the printer to skip this region selection page.
For the first question - Yes, if you have a Combo version of the printer, and already use the AMS, then you simply remove AMS and install the new AMS 2 Pro using the included accessories.
The power adapter is needed to use the drying function.
If you don’t already have an AMS unit, you will need to purchase the Filament Buffer
For the second question - Yes. The AMS Hub is needed to attach more than one AMS unit to the printer, at the same time.

Drying without the ability to print is a pretty impractical thing. I don’t understand why you can’t print and dry at the same time. I can’t turn on drying when I don’t have the filament pulled and I don’t have rotation checked.

Additionally, when using the printer’s control panel, you cannot select the K-value for PA/PET support — the machine simply fails to retrieve any values. Although this option is available in Studio, it isn’t accessible directly on the printer.

You need 1.09.00.00 to have the new one, the OP should have included that information as well as the new firmware for the AMS and maybe a link to them.
It seams that i have buy AMS 2 pro for nothing coz i can not use it features with X1E.
like Ikarus said latest firmware is V01.01.02.00 for X1E .
This is just shame. I havent know this before i purchase AMS 2 now is like i have regular AMS. this is what they say on site: Description X1 Series and P1 Series are compatible with AMS 2 Pro.
