Weird layer lines that differ depending on how I orientate part?

I have two screenshots in two different orientations of the part I am trying to print.

What I am trying to figure out is in the first picture in the red area, there are rough layers that look like a typology map. It is supposed to have a slight curve and is not a flat plane.

In this second picture, I have the part orientated differently and the same surface where the red was before are no longer there.

I have printed in both orientations, and I get different surface finishes.

Any tips on improving this?

Use lower layer heights or variable layer height.

The orange is outer wall, the red is sparse infill. You might need to try detect thin wall and or arachne wall type.
