Is there any test i can perform to understand if the issue with z axis is due to the shrinkage of the material or if I have someting wrong in the printer?

Try printing with a low shrinkage filament and compare the two.
Out of curiosity, what material are you having troubles with ?
Its a Prusament PLA.
