You can manually edit your gcode to insert pauses wherever you want - midlayer, multiple per layer, whatever. Failing that, get the new AMS hub from Bambu and get either an AMS-HT or one of the other AMS options.

With the latest Studio and firmware updates you can use the AMS Lite and the External spool to do just that. I have printed up 7 colors per layer. See this post where i did 6 colors:
